This recipe for Foil Packet Chicken Recipe with Baby Red Potatoes and Asparagus feeds four people, but feel free to make more or less depending on your needs. The chicken is marinated in a delicious sauce made of honey, apple cider vinegar, soy sauce, garlic, parsley and butter.

We suggest marinating your chicken while you get your fire going at the fire pit. You'll be surprised at how tender and juicy your chicken ends up with this foil packet method since all of the juices from the chicken stay right in the foil packet and steam.





And the best part? There is minimal mess and clean up afterwards! Giving you plenty of time to sit and relax with your family or friends by the fire well into the night.


You'll be amazed at how even picky eaters will enjoy foil packet meals. If asparagus and red potatoes aren't your thing, try something different like broccoli, zucchini, cauliflower, snow peas or carrots. We love to use the fresh vegetables right from our gardens.





Here's How to Make Foil Packet Chicken with Baby Red Potatoes and Asparagus


You will need:




  • 2-3 chicken breasts

  • 1 1/2 lb. bag of baby red potatoes quartered

  • 1 bunch of asparagus

  • 1/2 cup of honey

  • 2 tablespoons of apple cider vinegar

  • 2 tablespoons of soy sauce

  • 2 tablespoons of minced garlic

  • 1 teaspoon of nature’s seasoning

  • 1 teaspoon of parsley

  • 3 tablespoons of butter

In a large bowl, make your marinade by whisking together the honey, apple cider vinegar, soy sauce, minced garlic, parsley, butter and Nature's Seasoning. Place the chicken in the marinade and refrigerate for 30 minutes.





When it is time to assemble your foil packets, cut the asparagus stalks in half and set up your foil sheets. This recipe is for 2 foil packets, so you will need 4 pieces of foil, as we recommended doubling up to prevent any spills or leaks.


Place a piece of chicken in the center of your foil sheet. Place your potatoes and asparagus around the chicken. Pour some of the marinade over the chicken and vegetables. Be sure to not overfill your foil packets.


Close the foil pouch and place on the grill over high heat for 20-30 minutes until the chicken is fully cooked. Your cooking time will vary based on the size of your chicken and potatoes. Your meal is done when the chicken reaches 165 degrees and the potatoes can be pierced.





If you are cooking this Foil Packet Chicken recipe at home in the oven, you can! Your chicken will need 50-55 minutes until it is cooked through.


When your chicken is cooked through, carefully open the pouch and let it rest for a minute or two. Enjoy!





How to Fold Your Foil Packet


Fold your foil lengthwise and then roll up the ends to seal your packet.


If you have any leftovers, take your chicken and vegetables out of the foil packet and store them in an airtight container for a few days.
