How to Make Homemade Granola Bars


Ingredients

  • 4 cups crisp rice cereal

  • 2⅔ cup old fashioned rolled oats

  • ⅔ cup ground flax seed

  • 1½ cups pure honey

  • ⅓ cup coconut oil

  • 1 cup almond or peanut butter

  • 2 teaspoons vanilla extract

  • ½ cup mini chocolate chips



Instructions


Place parchment paper in a 9x13 casserole dish or on a large baking sheet.

Mix together your rice cereal, oats, and flaxseed in a large bowl. Set aside.



Heat a medium-sized saucepan over medium-high heat, mix together honey and coconut oil in the pan until melted. Continue to stir occasionally and leave on until it starts to boil.




Remove the pan from the heat. Mix in almond butter (or peanut butter) and vanilla extract until the almond butter is completely melted into the mixture.



Pour the melted mixture from the saucepan over the dry ingredients. Mix well. Allow the mixture to cool for about 10 minutes.



Place the granola mixture over parchment paper in the prepared casserole dish or baking sheet. Evenly distribute the granola mixture.



While your granola mixture is still warm, sprinkle your chocolate chips evenly over the mixture.


Use another sheet of parchment paper to place on top of the granola and chocolate chips. Press down well using your hands, or another hard item (such as a small cutting board, cookie sheet, etc.) This will melt your chocolate chips into the granola bars as well as making sure that your mixture is evenly pressed.


Place the granola bars in the fridge for at least an hour to overnight before cutting into 32 squares.




How to Store Your Granola Bars


Once you have cut your bars, wrap the individual bars in plastic wrap or parchment paper, stored in an airtight container. Keep in the bars in the fridge until ready to enjoy. They can also be frozen for up to 2 months. Thaw at room temperature for about 25 minutes prior to enjoying your granola bar.
